PINEAPPLE UPSIDE DOWN CAKE

2/3 cup butter
3/4 cup brown sugar

Place the butter and brown sugar in a frying pan and melt until it boils or bubbles. A cast iron pan works well because it's heavy and will be less likely to scorch.

1 can pineapple slices
maraschino cherries (enough to fill centers of pineapples)

Place pineapples in the butter and sugar mixture. Put cherries in the center of the pineapple. Cut the slices of pineapple into halves and line the sides of the frying pan with them (standing up on edge).
Prepare a box of yellow cake mix following the directions on the box to mix the batter (do not bake in a separate pan; follow instructions below).

Pour the batter over the pineapple and cherries.

Bake at 350°F degrees. When the cake is done, loosen the edges with a butter knife. Remove from heat and allow to sit five minutes, then turn it upside down on a serving dish.

Optional: Instead of using a cake mix, you can prepare the batter from scratch using the recipe below, or any recipe for yellow cake.


Scratch Cake:

1 cup flour
1 teaspoon baking powder
1/2 teaspoon salt
2 eggs
2/3 cup sugar
1/4 cup milk

Combine ingredients and beat 1 minute. Pour batter over pineapples and cherries (same as above). Bake at 350°F and follow same steps as above

MISSISSIPPI MUD CAKE

2 c. white flour
1 tsp. baking soda
1/4 tsp. salt
1 3/4 c. strong coffee
1/4 c. bourbon, brandy, coffee chocolate or mocha liqueur (or 1 tsp. flavoring)
5 oz. unsweetened chocolate
1 c. butter
2 c. sugar
2 eggs, beaten lightly
1 tsp. vanilla

Preheat oven to 275 degrees. (Yes, that's right its not a typo!) Generously butter 10" bundt pan and dust with cocoa. Sift together flour, baking soda and salt. Heat coffee and liqueur or flavoring. Add chocolate and butter, stirring until melted. When smooth, add sugar and stir until dissolved. Let mixture cool for several minutes and then transfer to large mixing bowl. Add flour mixture 1/2 cup at a time, beating until smooth after each addition. Add eggs and vanilla. Beat 1 more minute. Pour into bundt pan and bake 1 1/2 hours until cake pulls away from sides and springs back when touched in middle. Remove cake from oven and let it cool for 10 minutes in pan, then invert onto cake plate leaving pan sitting over it. Remove bundt pan when cake is completely cool.

1/2 cup butter
2 (1-ounce) squares baking chocolate
1 cup all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
2 large eggs
1 cup granulated sugar
1/2 cup applesauce
1 teaspoon vanilla extract
1 (10 1/2-ounce) package miniature marshmallows, divided use

Glaze:
1/2 cup granulated sugar
2 tablespoons milk
2 tablespoons butter
1/4 cup semisweet chocolate chips
In a saucepan melt butter over medium heat; remove pan and add chocolate. Let stand a few minutes and then stir until chocolate has melted. Cool for 10 minutes.
Combine flour, baking powder, baking soda and salt; set aside.
In a mixing bow, beat eggs, sugar, applesauce and vanilla. Stir in chocolate mixture. Add dry ingredients; mix well.
Pour into a greased 13 x 9 x 2-inch baking pan. Bake at 350*F (175*C) for 20 to 30 minutes or until cake tests done when wooden pick inserted in center comes out clean.
Set aside 1/2 cup marshmallows for the glaze. Sprinkle remaining marshmallows over cake. Return to the oven for 2 minutes or until marshmallows are softened.
In a saucepan, combine sugar, milk and butter. Bring to a boil; boil for 1 1/2 minutes. Remove from the heat; stir in chocolate chips and reserved 1/2 cup marshmallows until melted. Quickly drizzle over the cake. (Glaze will harden as it cools.)
Makes 12 to 16 servings.

1/4 tsp. cinnamon
1/2 tsp. salt
1/2 tsp. vanilla
1 egg, beaten
1/2 c. milk
1/2 c. sugar
1 tbsp. melted butter

Mix ingredients together (if desired add extra cinnamon and nutmeg for more flavor). Add enough more flour to make dough firm enough to handle but keeping dough as soft as possible. Chill.
Fill deep fryer with oil and preheat while shaping donuts. Take some dough and roll out on floured surface. Shape with floured donut cutter and place on floured wax paper. Let donuts stand for 5-10 minutes before frying. Using tongs, drop donuts (3 or 4 at a time) into preheated oil. Donuts will rise to top. Turn after about 1 minute and fry on other side. Place on paper towels to drain. Donuts may be frosted or sprinkled as desired.

If desired, donut holes may be made from the centers of the cut donuts. Just drop them in oil and gently turn them for about 2 minutes.
